Ingredients:
- 2 medium sweet potatoes
- 1 cup broccoli florets
- 4 medium pieces of Whiting Fish (or any white fish of your choice)
- 2 tablespoons butter
- 2 tablespoons basil Dijon mustard
- Black pepper, to taste
- 3 teaspoons garlic powder
- A pinch or two of red pepper flakes (adjust to your spice preference)
- 2-3 teaspoons ZEats Everything Seasoning (or your preferred all-purpose seasoning)
- 1-2 tablespoons extra virgin olive oil
- 1 tablespoon honey
Directions:

Preheat your oven to 400°F (200°C). If using a convection oven, adjust the temperature accordingly.

Wash the sweet potatoes, dry them, and cut them in half lengthwise. Use a small knife to poke a few holes on both sides of each sweet potato.

Rub the sweet potatoes with olive oil, a pinch of salt, and black pepper. Place them on a foil-lined baking sheet.

Bake the sweet potatoes in the preheated oven for about 40 minutes, flipping them over halfway through the cooking time.

After 35 minutes, add the broccoli florets to the baking sheet alongside the sweet potatoes.

Remove the baking tray from the oven once the sweet potatoes are soft and the broccoli is tender. Keep them warm.

While the sweet potatoes and broccoli are baking, prepare the seasoned fish. Pat the thawed fish fillets dry with paper towels.

In a bowl, mix olive oil, black pepper, garlic powder, ZEats Everything Seasoning, red pepper flakes, and basil Dijon mustard. Coat the fish fillets with this mixture evenly.

Line another baking tray with parchment paper and place the seasoned fish fillets on it, skin side down. Add small pieces of butter on top of each fillet.

Bake the fish in the preheated oven for approximately 15 minutes or until the fish flakes easily with a fork and has a golden-brown crust.

While the fish is baking, you can make a glaze for the sweet potatoes. In a small saucepan, heat the honey over low heat until it becomes more liquid. Drizzle the honey over the baked sweet potatoes.

Once the fish is done, remove it from the oven and let it rest for a minute.

Serve the Basil Dijon Mustard Baked Whiting Fish alongside the baked sweet potatoes and broccoli. Garnish with fresh basil.
